Easy to do when Uncle Steve competes with Nephew Mikey!
Nephew Mikey posted one of his Gaufre Gourmet breakfast waffles on facebook today, and I was hungry.
Knowing we had Gaufre Gourmet waffles in the freezer, I asked Uncle Steve to improvise one of Nephew Mikey’s for me. He was not enthused.
Clever as I am, I suggested Steve prepare a savory West Coast Scrapple waffle, too, and I would snap a few pics to make a blog post out of it.
You should have seen Uncle Steve’s enthusiasm soar!
Take one frozen Gaufre Gourmet liége style waffle and thaw in oven. Melt pepper jack cheese on it. Place perfectly cooked West Coast Scrapple on top of melted cheese, add fried egg with runny yolk. Salt and pepper to taste, sprinkle with cilantro and VOILA!
You have one happy wife on your hands. (I’m still smiling:)
Best part of all . . . there was variety in today’s breakfast because Uncle Steve DID improvise Nephew Mikey’s waffle . . .
This one may not have had the Camembert, arugula and fig sauce like The Gaufre Gourmet food cart served today, but it was certainly DELICIOUS, I’ll tell you!
This Gaufre Gourmet liége style waffle is topped with melted pepper jack cheese, quality bacon–not too crispy, and sprinkled with cilantro. I shared this one with our daughter, Claire, and had half-of-a-half of Uncle Steve’s West Coast Scrapple waffle. I don’t know why he never prepares one for each of us . . .
He must not want my butt getting big because I could’ve eaten more, More and MORE of either one of these.
